It’s Running Season!!!

I’ve got three really fun runs planned for this summer, so my running back in full swing, and it feels great! I did a mile this morning, and I am planning a mile on my lunch break! I am loving loving my VFF more and more this year, and I wear them everywhere. I tend to where these more than the ones that look like they belong to a flamingo. I almost need to get a new pair, as I am quickly wearing these out!

 

My first race of the year is going to be “Hoods in the Woods” in Downingtown:

Do you like drinking great beer after a tough run? Then Hoods in the Woods is for you! Go for a run in the beautiful, rolling hills of Chester County and know that plenty of Victory beer will be waiting for you at the finish line!

Hoods in the Woods is a fast and challenging 5K course with several natural hazards and great variety of terrain. Finish the race and enjoy the amenities of Victory Brewing Company’s Brewpub on Wheels. Enjoy some BBQ, a big cold beer and a killer hoodie — all included in the registration price. Continue to rock out with DJ K-Bomb and a great line up of award-winning Victory ales and lagers flowing from Victory’s state-of-the-art mobile pub.

All proceeds benefit the Leukemia & Lymphoma Society.

My second race of the year is the one I am MOST excited about, the Naked Foot Race in Washington, D.C.:

Every few years a new idea or trend comes up in the running world and minimalist running seems to cycle through every once in awhile.  While this may be interesting, it has nothing to do with The Naked Foot 5k.

We are passionate about getting people of all ages outside, moving, and having some fun.
Our event is all about providing education in case you want to learn how to run better (whether in shoes or without), creating a one-stop-shop for those who want to check out the latest green or natural product/service or try out a hot new fitness fitness regime, whether it be Parkour, Chi Running or Crossfit.  Consider The Naked Foot 5K the ultimate outdoors lifestyle festival!

And my third race, looks, well, awesome! This might be the most FUN race of them ALL! The Color Run!

The Color Run is a one of a kind experience that is less about speed and more about enjoying a color crazy day with your friends and family. For our events, it is about participants of all different speeds, ages, shapes, and sizes toeing the start line. Whether you are a casual morning mall walker or an Olympic athlete, the 3 miles of the Color Run course will be the most enjoyable real estate you’ve traveled in a VERY long time. RACE RULES

Rule #1 All participants are welcome… fast, slow, runner, walker, old, and young.
Rule #2 White shirt dress code at the official start line and ready to roll no later than 8am sharp!
Rule #3 Completely colored Willy Wonka goodness at the finish.

Philadelphia Museum of Art en route to the Rocky statue.  Basically the coolest course in town.

 

Basically, they hit you with colored corn starch and you come out looking like a rainbow of colors! I am SO excited!

Goat Cheese Bacon Guacamole

I love avocados. They are a sexy fruit. Sorry…that’s the only way I can describe them. I probably eat way too much of them too…but I love everything about them. The creamy texture. The way you can just scoop them out. The awesome green color.

Ok…I’ll stop so not to make this a love letter to the avocado fruit. But, I do love it. A lot.

Other things I love?

Goat Cheese. Also, bacon.

So I combined them.

I present to you: Goat Cheese Bacon Guacamole (yeah, you read that right. I DID do that!)

I decided to make this for my “Beer, Bacon and Burbs” club. It used to be a wine club, but now it’s an excuse to get together and hang out. Haha. We all get together and drink neat drinks and eat different food. It’s pretty awesome. Regardless, we try to have at least one thing with bacon in it. This was my addition.

The goat cheese gives the guac this lovely, thick creaminess, and the bacon adds a smoky, salty element. Needless to say, it was a hit amongst my friends, and ALL of it was consumed last night! :-)

 

Ingredients:

5 avocados

4-5 oz of goat cheese (plain)

I tablespoon of lime juice

1 small tomato, chopped small

I small yellow onion, chopped fine

6 strips of cooked apple smoked bacon, crumbled

Sea Salt and pepper to taste

 

Scoop the avocados out, and put in a bowl. Add all ingredients except for bacon, and mash and fold with a fork until smooth and all the cheese has been worked in. 10 minutes before serving, add your crumbled bacon.

Eat. Enjoy.
